Areas of Expertise

  • Work centers on understanding the relationship between diet and health.
  • Wu is particularly interested in antioxidants and antimicrobials and their preventive effects against cancer and obesity. She examines the impacts of food processing methods on the health benefits of antioxidants.
  • Studies common foods and the biologically active compounds and toxins they contain. She also investigates the efficacy and safety of minimally processed foods and functional foods (foods featuring claims they boost health or prevent disease).
  • Additional research explores natural antibiotic alternatives for the poultry and cattle industries.
